Espaces de stockage en dolium en « aire ouverte » et production de vin à l’époque romaine (Narbonnaise, Italie et Tarraconnaise. Ier-IIe s. ap. J.-C.)

Abstract

La découverte et la fouille, dans la villa de Saint-Bezard (Aspiran, France), de deux celliers a dolia sans murs périmétraux ni toitures ont offert l’opportunité de réexaminer le dossier des espaces de stockage « à ciel ouvert » connus dans plusieurs villae de la Narbonnaise, du sud de l’Italie et de la Tarraconaise. Après une présentation détaillée des données de Saint-Bezard, les caractéristiques communes et les différences structurelles de ces celliers sont analysées. On s’interroge ensuite sur leur fonction, qui pourrait avoir été d’accélérer le vieillissement du vin en favorisant, grâce à l’exposition au soleil, une concentration alcoolique propice à sa conservation.

The discovery and excavation, in the villa of Saint-Bezard (Aspiran, France) of two dolia cellars without perimeter walls and roof gave the opportunity to re-examine the file of storage spaces «in the open air» Known on several villae in Gallia Narbonnensis, southern Italy and Hispania Tarraconensis. After having presented in detail, the data of Saint-Bezard, are examined the common characteristics and the structural differences of these dolia cellars.
